Share and use your harvests wisely

When your veggie crops reward you with abundance, you may feel overwhelmed - not knowing what to do with it all.

Well, the one thing that you must not do is throw it away as there are so many ways of using a big harvest.

When it comes to greens, keep a supply in the fridge to cook or use in salads - they will stay fresh for at least four days if packed loosely into plastic bags.
Then you can also freeze some - just wash well and pack into freezer bags - these will be used straight from the freezer without thawing first and used in stews and soups.
If you are into juicing and smoothies then you can make your own health drinks for the family.

Although the new leaves are the tastiest, don't disgard plants that have older, tougher leaves as these have an even higher nutritional content and can be used in stews etc., - and use all the stems too.

Remember to share your harvest with friends and family and the less fortunate - they will be getting good organic food that is so good for us all.
Pickling veggies is another way of using them and then you have them for months on end.

Even crops that have bolted can be an asset - the flowers attract good insects into your garden - you can also use the flowers in salads or even pick bunches for the vase.

I also like doing many different things with the veggies I grow. Freeze, pickle fresh, or even dried (food drier was best purchase ever) I only pull them out if I need the space to grow something else, or if it is root vegetable. Also, I tend to leave at least one in there of each type to get free seeds. My neighbors do this too. We trade seeds and seedlings. I even promised someone some peppers if they water my stuff when I'm on vacation.

I trade a ton, I don't see many poor people who want my vegetables near where I live, but I do give them to friends and coworkers who don't grow stuff.

It is so nice to know that you are so proactive with your garden produce - I wish more people would realize the benefit of growing food - and good food too.

My son is big into salads. My three greens are kale, lettuce, and spinach, and the three of them are tasty together. I keep meaning to try the kale in a smoothie, particularly when I get a fresh batch of strawberries.
