GOLDEN ARTICHOKES 🌿🍋🌿

Hello My Dearest Foodies,

All vegetables are beautiful, but there is something special about artichokes. Although the edible part is very small, I still enjoy making them, especially because of the way they look. Well, what I actually really like is photographing them, lol. Not that I don't enjoy their taste, because they are real delicacy, however, I am little bit of a eccentric/artist and often I make pretty looking food so I can photograph it. I am sure you already suspected that about me so it's no secret, lol.

Nevertheless, artichokes are delicious and they are many different ways to prepare them. This is probably the easiest, nonetheless, delicious recipe if you like garlicky flavor like I do. So if you never made them before this is a good recipe for beginners.

GOLDEN ARTICHOKES
Oven Roasted Artichokes with Vegan Parmesan
Vegan – Gluten Free

INGREDIENTS
• Artichokes 6
• Garlic cloves 6 (peeled and sliced)
• Garlic powder
• Himalayan Pink Salt
• Oil
• Sharp knife
• Casserole dish

PROCESS
• Preheat oven to 425F.
• Trim the top of the artichokes about an inch.
• Trim the stems as well and remove few dry bottom pedals.
• Trip all sharp ends of remaining pedals with scissors.
• Cut each artichoke in half lengthwise and rinse well.
• Add about 1/3 cup of water in the casserole dish.
• Arrange your artichoke halves, brush them with oil, add salt and garlic powder.
• Turn them facing down, cover with lid or tinfoil and bake for 30min.
• When ready, turn them over and insert garlic slices between the pedals.
• Set the oven on grill and bake for 5 to 7 min.
• Serve with vegan Parmesan and lemon juice.

VEGAN PARMESAN RECIPE
• Raw cashews ¼ cup
• Raw almonds ¼ cup
• Nutritional yeast ¼ cup
• Garlic powder to taste
• Himalayan pink salt to taste

In a food processor, chop the nuts by pressing pulse button. Transfer to a bowl, add rest of the ingredients and mx thoroughly.

Artichokes are DELICIOUS @lenasveganliving! And we have been struggling for years to get them to grow. Although I think we need a couple dozen plants to support my love of them. A friend has the a huge artichoke plant. They bear magnificent and huge purple and lilac flowers
