KARAWILA SAMBOLA IN SRI LANKA RECIPE
Ingredients
2-3 Bitter gourds (Karawila)
1 tomato
1 medium size onion
1-2 green chili or to taste
Salt to taste
1 tsp lime juice
Oil for frying
Method
Step 1 – Deep frying bitter gourd
Wash bitter gourd. Cut in to halves and remove the seeds.
Slice bitter gourd thinly.
Add the bitter gourd slices in to salt water. This step is to remove some bitter taste.
Once all bitter gourd are sliced allow to soak in saltish water for about 5 minutes.
Then wash & squeeze in salt water.
Do another 1-2 washes and squeeze the water.
Heat oil for deep frying.
Deep fry the bitter gourd until golden colour.
Step 2: Preparation of the Karawila salad
Slice onion & green chili.
Slice the tomato.
Add salt taste. Mix well with lime juice.
Then add deep fried bitter gourd to this mix.
Mix well again to absorb the flavours to bitter gourd.
