21 Day Diet Challenge - Day 6

So on to the duty at hand...
Yup, @fat-elvis is back in his natural habitat and can do some proper exploratory cooking. What we have here is "cabbage steaks" with cassava arepas.
The cabbage steaks are a few slices about 3/4" thick of a standard green cabbage head. Drizzled with olive oil and lightly salted and peppered. Then roasted at about 400 degrees for 30 mins.
Now for the arepas. I have made similar before, when we were looking after a Columbian exchange student. I learned a few of her cultural recipes, so she would feel more "at home". Normally these are served with soft cheese and made of purely corn and onion. I made these from cassava (tapioca) flour, and added jalapenos and garlic, lightly browned in the skillet then baked along side the cabbage.
It was delicious and so nice to not eat a restaurant salad for a change!
This morning we started off with me making a couple of fruit and blueberry smoothies, with scoop of my vitamin/mineral supplement. I liked mine, but my wife found it a bit tart. I can add raw honey next time. Anyway, feeling better with bit more hearty veggies in me now, and we should be good to finish off the first week of the challenge.

Lol, well, I cut out beer for the 3 weeks as well! But they were actually really tasty! But I already liked cabbage, so there's that! But they were supposed to have grated parmesan cheese on them, I'm guessing that's an even tastier way to do it!
Great job @fat-elvis. I used to make berry smoothies and mix in everything but the kitchen sink, tomato, spinach, fruit, yogurt, ice. They were great and helped to curb my appetite before a meal. Probably the best that I have ever felt, with increased walking too. I need to get back to that.
Go for it! I would recommend a less strict diet thanu wife and I are doing... But yes even just adding the fruit smoothies and excersize is great! Cheers JB!
That looks good. I like both cabbage and arepas. My friend from Columbia introduced me to them.
Thanks Mrs V. They are a lot better with cheese, but even on they're own are great! Especially since I can't have any bread for this challenge!
