A fairly unique event occurred in my household today.

I prepared a vegetarian dish tonight.

Risotto with mushrooms.

When I tried to photograph the end result with the usual selfie the plate lit up like a Christmas tree.

Maybe the universe couldn't simply handle such an event and wanted to protect my readers or maybe it was overjoyed.

Who knows :)

Anyway, this is what I used.

The Mushrooms I used are called Champignons and they are the #1 go-to mushroom for every person in the Netherlands.

Nothing comes close to these mushrooms. It's been like this for decades (as far as I know).

Also bought a slice of parmesan cheese and a vegetable stock (not in the picture).

I haven't made risotto that much so I didn't know how much rice to use or what type of pan to cook it in.

I could have looked it up, but I'm a little bit stubborn regarding these things and I like to freestyle.

I went with 400 g rice and 2 liters of vegetable stock and a normal cook pot.

Very straight forward process. Fry an onion in the pot with some butter and olive oil.

Dump the rice in and start adding a soupspoon of stock to the mix.

Every time the liquid is absorbed by the rice you add more. Keep stirring.

In another pan fry the mushrooms with onion until golden brown.

When the rice is cooked you add the mushroom mix to the rice and your done!

I served it with some cheese on top!

Not bad at all tbh.

It's very filling too. I feel like I have a brick in my stomach (in a good way).

I did make too much though. 400g of rice is too much for two people.

I don't know if Rissotto can be reheated but I'll try it tomorrow after the gym.

400gr :P I think the rule of thumb is one handful of rice per person plus one extra for the pot :)

You make me laugh.. but why would I laugh at you when you never cook rice😆 400 grams? I cooked that much for 6 people or 2 times meals for 3 people😊 though in my observation..the rice not really well-cooked, but I never had risotto before, it probably different from common rice I have in Indonesia.

Haha, yeah it was way too much! Risotto is completely different from common rice. It's way more creamy. I don't make it often.

I make common rice a lot. Bianca showed me how to do it properly.

Actually.. it's look like something we called as Nasi Liwet here in Java, Indonesia, we use coconut's cream and spices to cook it, but still it's not risotto😉

Risotto is absolutely a vegetarian dish that I can eat often. 🤗

But ask any Dutch person what a Champignon is and they will point to these.

The Dutch word for mushroom is paddestoel.

I try to go meatless at least half the week. It has been a great challenge and has opened up my palette to different tastes and textures. As an aside, it reheats well! Put the risotto in a sauce pan. Add water / wine / broth stock. Sometimes I add a tiny bit of butter. (or not)

Did you, by any chance, get these champignons from the plantation in the former Tropicana swimming pool? ;>)

Make sure to add some olive oil and a little bit of water when you reheat the risotto

That still looks like a meat dish gone wrong, bro. The intense glow signifying the camera lens shrinking away in horror. Hoping the next one yields better results. :)
