Looks amazing. I made risotto last week. It definitely reheats well.
Champignon is French for mushroom. Those look like White Button Mushrooms. https://en.m.wikipedia.org/wiki/Agaricus_bisporus.
Risotto is absolutely a vegetarian dish that I can eat often. 🤗

But ask any Dutch person what a Champignon is and they will point to these.
The Dutch word for mushroom is paddestoel.
