Ulog #190: Roasted Chicken Rice
As much as I like making burritos, burgers, wraps, and grill cheese sandwiches, I love a good dose of local cuisine as well. Here in Malaysia, we're never short of food options and our catering clients know that well too. Thus we have lotsa varieties of meals to choose from when it comes to catering
Here's us doing an event for BMW and they requested for some Malaysian local food. So what best than to provide one of our famous local dishes - chicken rice.
So what is chicken rice actually? As much as the name gives it away, it's actually not entirely easy to make a great tasting chicken rice. Because there are basically 2 main components which are the rice and the chicken and the lesser the components means that both of them have to be extremely good or it'll show. Simple dishes can't hide errors.
So the chicken is shocked in boiling water then dumped right into ice cold water. This makes tightens the skin of the chicken and gives a crispier skin after roasting. The chicken is then roasted in a cylinder like oven that you can hang a whole chicken or meat in general. Because it's roasted whole, you get extremely juicy and flavorful chicken cuts.
The rice is steamed with aromatics such as ginger and garlic as well as the drippings from the roasted chicken which gives the rice it's fragrant as well as oily mouth feel when you take a spoon.
Some condiments that you usually find in a chicken rice dish are, grated ginger that is fried in oil, a chili sauce that's made with lime and garlic, and a bowl of soup often just a simple vegetable broth.
As easy as chicken rice sounds, it definitely is a labor of love when it comes to preparing it and that's why it's one of the top local favorites here in Malaysia....... and Singapore too :D
