A Wedding Cake by a Pastry Chef

About Pastry Chef Danielle

Ever since I was a little girl I love baking. It all started one Christmas season, my mother let me bake all the Christmas goodies for the month of December. I fell completely in love with baking. I knew from that moment on I wanted to become a Pastry Chef! As soon as I graduated from High school I attended the Le Cordon Bleu Culinary School in Pasadena, Ca. I specialized and got my diploma strictly in baking and patisseries. I wanted to do wedding cakes, I love the intricate detail that goes in to making a edible master piece.

With over 12 years of experience, I still love baking even more now , then when I started. There's so many new ways to create beautiful textures and designs out of sugar. I want to share my passion of baking with everyone! And perhaps, leave behind tips and ideas for your next wedding, party cake, or any other baking goods that you want to create.

Below is a wedding cake that I created for a wedding cake photo shoot!

I had such a blast making this cake!!

Above are handmade calla Lillie's and a handmade vase made out of fondant. Painted with petal dust.

The top tier is decorated out of a fondant that have been feathered out in to strips. (6" square)

The second tier is decorated with royal icing and painted on edible gold and different hues of green to tie in the calla lilies together. Sprinkled on gold sprinkles for a different effect. (10" square)

The bottom tier is decorated out of fondant with handmade ruffles. I placed them directly on to the buttercream cake. Didn't need to add a sheet of fondant because that would be too much icing and just a waste of product. (16" round)

The flavors of the cake were simple but really tasty. It was just chocolate cake, white chocolate Swiss buttercream with chopped Oreo cookies and a crushed up chocolate candy bar. Soooo good! But I love chocolate! :)
