Food Photography: Frozen Yacon Tuber
My main fiber source for the time being, all four kilos of it.
I ordered about four Kilos of fresh Yacon tuber or rhizome for that matter whichever from the vendor from Facebook a few weeks ago and a few days ago he actually delivered it to me where my mother was the one receiving it. I am quite disappointed that the Yacon Tubers were small and not that sweet as I am expecting.
The thing is that I was the only one here in the house eating it and I asked my mother to peel some for me and then put it inside our refrigerator's freezer so that it would not rot and then let myself eat it as my main "fruit" or source of fiber until it lasts.
It is quite a regretful order because the Yacon tubers are small and not that very enjoyable to eat but regardless it is better than nothing. So I will not be ordering another batch until I am very certain that the Yacon tubers are big enough for my liking.
My parents are not eating it so I guess that I will be the only one finishing it from start and down to the last piece. I think that it will last until next next, week and will then contribute to my big fluid gains from here on out because the Yacon tubers/rhizomes are so watery that I think it is more watery than watermelons and turnips, it is almost transparent in some parts especially the smaller ones.
So there you go, Yacon is quite delicious and so crunchy but it can be batter to eat if only they are more mature. I do not know why the farmers who planted these had harvested it so soon but it could be that the vendor who delivered it to me just gave the big ones to other customers while I had the bad batch with these little ones which I will be eating until the last piece is all consumed and it is just so many of them as I had ordered four Kilos which I though that my parents would also eat.
