Orange-nut muffin without flour: Recipe

Ingredients

• 450 grams of boiled or canned chickpeas;
• 4 eggs;
• 150 g of powdered sugar + 2 teaspoons;
• 1 teaspoon baking powder;
• 2 ½ teaspoons cinnamon;
• 1 orange;
• a little vegetable oil.

Preparation

Drain the chickpea liquid and rub it between the palms to remove the peel. If chickpea cooked, rinse it with cold water so as not to get burned. Chop the chickpeas in the blender until smooth.

Combine chickpeas puree with beaten eggs, 150 g of powdered sugar, baking powder, 2 tablespoons of cinnamon, as well as grated zest and juice of whole orange. Lubricate the baking dish with butter and put the dough into it.

Bake at 180 ° C for an hour. After baking, open the oven and leave the cake there for another 10 minutes. Mix the remaining powdered sugar and cinnamon and sprinkle this mixture with the cake before serving.
