It's a little late for lunch but it doesn't matter to me as today is a pretty sweet lunch for me. My Mom and Dad we t out for the day and will be returning only after the Eve so i am all alone at home free to cook whatever I want.so that's exactly what I did.

At first i thought about making Chicken Biryani but since it would take a lot of time i scrapped that idea and went for Veg Fried Rice and some Chicken Kassa. If you are wondering why the Veg Fried Rice looks a little dry it's because I did not use a lot of Butter to coat the Rice in so that it is delicious and a tad bit healthy as well.

As for the Chicken Kassa i kept the chicken marinated in spices for over an hour after i blanched the chicken slightly.

Some of you guys might think why the Blanching of Chicken?

The reason for that is pretty simple for me, I have tried previously various methods so that the spices get infused in the chicken and not over it and this method really works for me. Anyways the Lunch was very Delicious and fulfilling and i am happy right now. One thing that i felt missing would have been some Pickle on the side but we didn't have that at home so i had to leave that aside.
