History of Martabak Eggs And How To Make It At Home (Bilingual)

In Indonesia, there are two types of martabak namely sweet Martabak and Martabak Eggs. Specifically this time, we will discuss the savory version of this wheat flour. Martabak eggs are said to come from Yemen which has a sizeable Indian population. The word 'martabak' itself is taken from the word
'mutabbaq' in Arabic which means folded. But in Kerala, India, this food is called 'murtabak'. It comes from 'mutabar', the abbreviation of 'muta' (egg) and 'bar' (barota, pratha bread which is the basis of Indian martabak). Indian merchants then spread it to Arabia and Southeast Asia. In Indonesia, supposedly the creation of an egg martabak begins with the introduction of a young man from Tegal with an Indian man who is good at making martabak. The young Indian changed the original martabak recipe and adapted it to the taste of the Javanese who liked to eat vegetables and ate less meat. [ 2 ]

Materials for stuffing:

  • 3 eggs
  • 1 spring onion, sliced
  • 1 onion, roughly chopped
  • 3 pieces of red onion, roughly chopped

  • 200 gr minced chicken meat
  • salt and sugar to taste

Materials for skin:

  • 3 tablespoons rice flour
  • 1 tbsp tapioca flour
  • salt to taste
  • 1 tbsp cooking oil
  • 500 ml of water

How ​​to make:

  1. For stuffing, saute the onion, garlic, pepper, put minced chicken meat, add salt, and cook sugar until acid, set aside.
  2. In a bowl, beat the eggs, add sliced ​​leeks, onions, and stuffed stuffed stuff.
  3. For the skin, mix the rice flour, tapioca flour, a little salt, cooking oil, then pour water. Stir until not bergerindil.
  4. Then heat the pan, give a little oil, then dadar skin dough. Wait until the edges are dry.
  5. Then pour the stuffed martabak and fold then fry. Stir-fry to mature up to the inside, back and forth until cooked perfectly.

Martabak telur adalah kudapan yang dibuat dari adonan tepung dengan isian telur, daging berbumbu, dan daun bawang. Nantinya, adonan tersebut dipipihkan, diberi isian, dan digoreng hingga matang. Hampir di tiap sudut jalan, ada saja penjual martabak telur yang dibarengi dengan martabak manis. [ 1 ]

Martabak telur konon berasal dari Yaman yang memiliki populasi India cukup besar. Kata 'martabak' sendiri diambil dari kata
'mutabbaq' dalam Bahasa Arab yang berarti dilipat. Namun di Kerala, India, makanan ini disebut 'murtabak' . Asalnya dari ' mutabar ', singkatan dari ' muta ' (telur) dan ' bar ' ( barota, roti pratha yang menjadi dasar martabak India). Pedagang India lalu menyebarkannya ke Arab dan Asia Tenggara. Sang pemuda India mengubah resep asli martabak dan menyesuaikannya dengan selera orang Jawa yang suka makan sayur dan tak banyak menyantap daging. [ 2 ]

Martabak telur

Bahan-bahan untuk isian;

  • 3 butir telur
  • 1 batang daun bawang, iris-iris
  • 1 buah bawang bombay, cincang kasar
  • 3 buah bawang merah, cincang kasar
  • 2 siung bawang putih, cincang kasar
  • Merica
  • 200 gr daging ayam cincang
  • garam dan gula secukupnya

Bahan-bahan untuk kulit:

  • 3 sdm tepung beras
  • 1 sdm tepung tapioka
  • garam secukupnya
  • 1 sdm minyak goreng
  • 500 ml air

Cara Membuat:

  1. Untuk isian, Tumis bawang merah, bawang putih, merica, masukkan Daging ayam cincang, tambahkan garam, dan gula masak sampai asat, sisihkan.
  2. Dalam mangkok, kocok telur, tambahkan irisan daun bawang, bawang bombay, serta bahan isian yang ditumis tadi.
  3. Untuk kulit, campurkan tepung beras, tepung tapioka, sedikit garam, minyak goreng, kemudian tuang air. Aduk sampai tidak bergerindil.
  4. Kemudian panaskan wajan, beri sedikit minyak, lalu dadar adonan kulit. Tunggu sampai bagian pinggir kering.
  5. Kemudian tuang isian martabak dan lipat lalu goreng. Tusuk-tusuk biar matang sampai ke bagian dalam, bolak balik sampai matang sempurna.
