中国人的面条,新鲜口感好,大人小孩都爱吃!

大家好!我是YITING,今天为大家带来陕西油泼面的作法,做法也相当简单,爱吃面食的朋友们不妨试一试。食材:面粉500克、盐1小勺,食用油适量、配料:青菜1把、辣椒面适量、葱花适量、豆芽适量。

做法:

1、面粉里加入盐,盐多了不容易拉开(加盐的目的是为了面吃起来更加筋道)。

2、一边加水,一边用筷子搅拌,将面粉搅拌成絮状。

3、揉成面团,做拉条子的面不能太硬,不然拉不开,也不可太软,否则煮出的面不精,基本要比平时做饺子的面团硬一点儿,揉成光滑面团,盖保鲜膜醒面1小时,中间多揉几次更劲道。

4、醒面的时候准备配菜,青菜洗净,豆芽洗净,辣椒面,葱花备好。


5、取出面团揉上劲,这样面就和好了。

6、然后在案板上擀成1公分左右厚面饼,用刀切成窄的长条。

7、取一个搓成长条,每一根长条,均匀的蘸满油。

8、取一个大一点儿的盘子或者盆子,底部倒一些食用油,搓成的长条一圈一圈盘在盘子里。

9、盘好的面条盖上盖子,继续饧发半个小时以上,然后依次取出其中一根,捏住面条一端,两手腕均匀受力,将面条象缠毛线一样,左绕一下,右绕一下,将面条拉长。

10、拉条子的同时烧上一锅水,面拉好了水也开了,下面进去,中间点两次凉水,然后下青菜,豆芽,大火,滚开,用筷子搅一下,再煮1—2分钟,熟了捞出。

11、面条捞入碗中加上辣椒面,葱花,烧热油泼在辣椒面上,呲啦一声,闻见一股香味,吃的时候加盐再倒上一些酱油和醋。搅拌一下就可以吃了,很香很劲道哦。
