GASTRONOMY OF ANTIOQUIA
It is the typical, traditional gastronomy that is practiced in the department of Antioquia, Colombia. It is an essential part of the "regional identity" and by extension of its culture is practiced equally in the so-called Colombian region of Colombia or the Coffee Hub. Today, part of the gastronomy of Antioquia is practiced in other regions of the country. Is also influenced2 by the rest of the gastronomy of Colombia.
The gastronomy of Antioquia is a mixture of the gastronomy of several cultures. The first inhabitants of the region, in pre-Columbian times, already knew some of the foods that are part of the current Antioquian dishes.7 Maize, beans, cassava, some tubers, some vegetables, certain herbs, spices, fruits Wild and meats of game and fishing animals.
