Desk wise I really just want to make a flat counter top like surface 24" x 80", legs wont be an issue, I'm just using cabinets as the base under it. I like the breadboard idea. I have access to just about any tool ... and this is the wood...



Here’s my suggestion:

Saw the twisted board diagonally in line with the axis of the twist. Square the sides. Put the straight board in the middle. Glue it up. Maybe use some splines. Plane the whole thing flat. Square the ends. Add the breadboard ends.
If it is so twisted that you cannot flatten both sides without losing too much thickness, or if you want extra rigidity, try gluieng cross pieces into grooves on the bottom then flatten those and rest them on your cabinets.
