竹笋进来满院香

去年暖冬,今年春早。竹笋已大量冒尖。

我们这有用小笋煎鸡蛋的吃法,正好现时鸡蛋便宜,所以不少人上山去扯笋。将笋剥了用刀拍扁,切碎。放锅里干烧,破坏草酸钙。烧干水分盛碗里放凉,放鸡蛋及佐料,煎鸡蛋饼,又香又脆。是很好的下饭菜。

小笋炒淹菜也是一道美味素菜。将笋子用水撩一下,切碎。也要先干烧,烧好后盛出。刷锅放油,先炒淹菜再放笋。酸酸脆脆。大人小孩都爱吃。

炒新鲜竹笋不可忽略的一步就是干烧。如果放油炒炒出来的菜肯定发涩。

我今天也一举两得,踏青观光扯笋子,忍不住晒一晒。😄😄
