I recently tried a recipe for my friend that is diabetic .At first I was quite worried and I needed to find out what diabetic could eat and what they couldn't. I tried making enquirers and found a list of 17 items that are diabetic friendly.
Here is the list I came up with.
13. red onion
14. red peppers
19. olive oil
20. green chilies
Reading through this list I was over the moon, as most of these items are my daily ingredients. So I made up this delicious meal.
1. 3-4 Tbls olive oil
2. 1/2 cup carrots .julienne
3. 1/2 cup red pepper, sliced
4. 2 Tbls garlic ,crushed
5. 1 large tomato cut in 1/4 's
6. 1/2 bunch spinach, chopped
7. 100g almonds
8. 3 sticks asparagus, choppers
9. green chilies
10. 1/2 red onion , chopped
`12. 800 g salmon cut in stripes
13. 1 kg wholewheat pasta
14. fresh coriander Chopped (garnish)
Heat half the olive oil and stir-fry the vegetable. Allow to cook of less then 2 minutes leaving the vegetable crunchy. Place aside
In another pan heat the rest of the oil . Add the garlic and chille for 1 minutes . Then add the Salmon stripes. Allow the salmon to cook through.
Cook the pasta until soft .
Toss all the ingredients into the pasta.
Mix the fresh coriander and yogurt together . Drop a scoop on top of the meal, as a garnish.
Now it was time for my friend to taste. Well it was a winner. He still can't believe that a diabetic can eat such tasty food.
