Sausage and Potato Soup

What’s better for supper on a cold, dreary New England day than a nice warm bowl of soup? This soup features Italian sausage, bacon, potatoes and kale in a velvet cream stock. Serve it up with some crusty bread and you’ve got a meal! This is another one of my originals that I’ve adjusted over the years. It’s pretty easy. You know I like easy!

Ingredients

1/2 lb bacon
1 medium onion diced
1 cup water
1 lb Italian loose sausage
2 carrots diced
2 celery stalks diced
1 -2 large russet potatoes
48 oz chicken broth
1 bunch kale
1 pint light cream
Salt, pepper to taste

Directions

Cut the bacon into 1/2" pieces and dice the onion

In a large stockpot add 1 cup of water, the bacon and onion at cook over medium heat until the water is mostly evaporated.

Add the sausage and continue cooking until the sausage is brown. Stir frequently while separating the sausage into small chunks.

Meanwhile dice the carrots, celery and potatoes

After the meat has browned stir in the veggies.

Add the chicken broth and bring to a boil

Meanwhile wash the kale and pull the leaves off the stalks. You'll be using the leaves and discarding the stalks.

When the stock comes to a boil, stir in the kale. It may seem like a lot but don't worry the kale will cook down quite a bit.
Once the stock comes back up to a boil, cover and reduce the heat to a simmer. Continue cooking for 45 minutes or until the veggies are soft.

After the veggies are done, stir in the cream and bring back up to a boil.

Slice up the bread. Today I used roasted garlic ciabatta.

Plate it up and top with a generous helping of shredded Italian cheese!

I came to check it out because I thought what a strange combination... sausages and potatoes... I have to say, it looked really good 😊

Thank you for your comments! It actually does taste quite good.

Are there any reasons to boil the bacon first instead of just stir-fried it until it's crispy? I am definitely going to try it out! Hopefully I can find the Italian sausage at a nearby grocery store
