We’ve been in New Hampshire for a couple of weeks now, so it’s about time to have some lobster. And it’s the perfect time of the year to do it too. The ocean water is still cold, so the meat is sweet and the shells are full. Soon when the water gets warmer and the lobsters begin to molt, the shells are soft, loose and the meat is just not as sweet.

For no special occasion, other than the time was right, yesterday was lobster night!

Lobster dinner in New England is not overly complicated. It’s basic and simple. There’s no special sauces or garnishes, the lobster is the highlight and anything else with it would just be a distraction. So just a baked potato, some crusty bread and a little melted butter for dipping and you’re good to go!

You'll need one live and kicking lobster per person.

Dinner for two

If you lay them on their back they'll go to sleep.

Fill a large stock pot up about half way with water. Add a generous amount of salt and bring it to a boil.

Once it's boiling put in the lobsters head first. It's the merciful way and the meat will be more tender.

Cover and set the timer for twenty minutes

Once the water has come back to a boil keep an eye on it so it doesn't boil over. You may want to reduce the heat back down to a simmer.

After 20 minutes, remove the lobsters and plate them up with a baked potato and some bread. Serve with a side of melted butter for dipping.

By the way you don't need to use a bib! They're just for babies and tourists! Real Yankees say NO to bibs!

Ahh lobster they are expensive here. You are making me crave for one right now lol.

They're expensive here too! But they cost less here in New England than else where in the country.

I need to save some money before feasting on lobsters like these :D Nice photos :)
