What's Cooking Challenge - Smothered Kingfish

When an unsuspecting kingfish gets caught up in our friend Captain Glen's shark net, guess what we're having for dinner.

In many countries eating the fish whole is the way to do it. However, as you might have known, Sheila doesn't even want to know that her fish ever had a head much less eat it whole. So sorry, Mr. Kingfish it's the fillet knife for you. Plus, the fact that Sheila saw the head, the only way that she'll eat it is if it smothered, hidden away under other goodies.

Smothered in tomatoes, black olives, lemon slices, Italian parsley, and wine. Baked at 400 F for 20 minutes.

Served up with a dollop of mascarpone and a side of basmati rice. Even Sheila loved it!

Like Sheila, I'm not a big fan of fish... but this recipe sounds quite amazing (maybe because the fish is hidden away :P)... either way, thanks for sharing and good luck with the contest.

Kingfish is related to mackerel and can be more fishy tasting than a white fish. It stands up well to the tomato sauce. Thanks for your comments!

Looks good! I'd never heard of Kingfish before, how does it compare to other more regular fish?

It is related to mackerel. Just bigger. It has a dark meat like bluefish.

Thanks, sounds interesting. Just got to figure out if it is possible to find it in Netherlands. And then what it is called!
