Weightloss Journey - Day 37 - Whole 30 Approved Coconut Milk Coffee Creamer Recipe
Hello, my name is Rachel Adams and I'm on a journey to lose 50lbs this year! This is no small feat, so I started this year off with the Whole 30, 2 weeks into my first round of the Whole 30 I was DESPERATE to find a good coffee creamer! So I reached out to my facebook friends begging for some Whole 30/Paleo options. To say I came up short is an understatement. While I appreciate all the help the suggestions were just not that tasty. Except for one that is! So if you are like me and can't stomach drinking coffee black and are struggling to gag down the unsweetened, non-dairy nut "milks" out there TRY THIS RECIPE! I swear I can eat this mix right out of the jar, it is seriously that good!
INGREDIENTS
1 can 13.5 ounces of coconut cream (unsweetened)
1/2 cup of dates (medjool pitted)
2 tablespoons of collagen peptides powder
1 teaspoon Himalayan pink sea salt
1 tablespoon cinnamon
INSTRUCTIONS
Mix all ingredients in a blender or food processor and blend until the dates are pureed. If the mix is too thick for your liking drain it through a fine mesh strainer to remove the excess cream and any bits of dates that weren't pureed. Store the mixture in a glass jar with a tight fitting lid in the fridge. This mix keeps for 1 week. Keep in mind the creamer will naturally thicken in the fridge so stir or shake it before each use.
