Psychedelic Coconut Ice.
It's a firm favourite in South Africa and super simple to make because you can control the strength of these Jacked up ones!
Utensils you will need:
2 silicon spatulas
A few mixing bowls
Baking paper
Baking tin
Ingredients:
320g dessicated coconut
1 tin condensed milk
Food colouring of choice
1 tsp vanilla extract
400g powdered sugar
Amount of infused coconut oil of your choice
Method:
In a bowl, mix together all the ingredients except the food colouring.
Divide the mixture in half, adding the one half to the baking paper lined baking tin and pressing down to make a flat white surface. Divide the remaining mixture between bowls and mix the colouring into the coconut mixture.
Scatter the colours randomly.
When done, press down to make everything level.
Set baking tin aside and allow to "dry" for 3 hours.
After 3 hours, cut, then allow pieces an hour or so to dry out more.
