I imagine he would be slimmed down to his old self. Character-wise, the issues that drove him to that state have been resolved by the end of Endgame. Story-wise, keeping "Fat Thor" would probably be beating the joke to death (one might make the case they already did in Endgame). Budget-wise, it costs more time and money to keep him as "Fat Thor". And of course, the eye-candy aspect of the old Thor is more appealing for most ladies out there... and I would imagine a segment of the male population too. 😏
