for me a lot is new in your recipe. I never baked raw beets and fennel in the oven and I do not even know what the squash is :) :)) it will be necessary to try! I really love lentils :)
Oh you need to try at least the beets and fennel! They become so rich and earthy sweet after roasting! :) The acorn squash is similar in flavor to some of the other orange squashes--have you had kabocha squash maybe?
I looked on the Internet what squash is. I did not see anything like that in Israel.
Interesting, perhaps it is not the right climate for that kind of vegetable. I'm sure you have lots of other yummy things I can't get here!
