Info: It is a traditional Polish vegetable Jarzynowa Salad. This salad is from Poland country. I'm not using any pickles in this recipe if anyone is from Poland then they will notice sure. Try this recipe at your home, it is too delicious.

Ingredients:

5 yukon gold potatoes boiled, peeled and cubed
4 eggs boiled, peeled, sliced
5 carrots peeled, boiled, cubed
1 parsnip peeled, boiled, cubed
½ celery root peeled, cut small slivers, blanched 2 minutes.
1 green apple peeled cubed
4 kosher dill pickle spears cubed small
½ cup Le Sueur canned peas or any canned small peas, drained
1 cup mayonnaise
1 cup sour cream
1 tbs yellow mustard
1 tsp salt, 1 tsp pepper
½ cup dill minced
½ cup Italian parsley minced

Steps:

Step 1: Add cooled cubed potatoes, carrots, parsnip and celery root in large bowl.

Step 2: Add apple, pickles, peas and eggs.

Step 3: Mix together mayo, sour cream, mustard.

Step 4: Mix into vegetable bowl.

Step 5: Sprinkle with salt, pepper, dill and parsley.

Step 6: Mix again.

Step 7: Refrigerate for 4 hours till serving.
