Vegan Lox and a Schmear
This New York classic came into the world at the end of the 19th century and represents a typical American Jewish delicatesse.
Originally I wanted to do an Indian dish with homemade paneer, but soymilk behaves a little different than regular milk, so I ended up with vegan cream cheese.
Plan one day before if you don’t want to squeese that nut milk bag too much.
1 L soymilk, high percentage of soybeans is best
½ L soy yogurt

Pour a little water into a pot, we don’t want that milk get burned, right? Boil, then add the soymilk and boil again. Like regular milk it bubbles up, so be careful. Add the soy yogurt and turn the heat off. Yogurt cultures feel at home at 42°C, but lets not make a science out of that. let it rest for 10 minutes, the whey should seperate from the cheese by then.

If you still don’t have a viscous consistency, you can squeeze half a lemon into the pot.

Pour the sauce into the nut milk bag over a bowl and let it drip over night. The next day you should have a nice creamy consistency. You can also squeeze and wait 2 hours, but with less yield.
The whey you can drink, it has a nice creamy taste, or use for other recipes.

It gets much easier now, cut the bagels in half and toast them in the oven.

Prepare a little oil in a pan, cut the vegan salmon in filets and roast a little.

Schmear the bagles with vegan cream cheese, top them with vegan salmon, tomato slices and red onion slices, sprinkle the capers over and take a bite!
What!!!! Vegan salmon! Does it taste like salmon, i'm intrigued?
If you never tasted salmon before then yes, other than that, not even close😂 It tastes good though, It’s smoked and the nori gives it a salty touch. It is soy and seitan, and thats how all those products taste. Wanted to make my own “smoked salmon” out of carrots, just for consistency and color, but you need liquid smoke and have to marinade for 3 days.
hmm maybe I'd like it then because I've actually never tried salmon before 😂 Carrot salmon sounds good though! :)
Realy? That’s kinda cool, in the plant world konjac would be the closest relative to smoked salmon, at least from the consistency :)
Yeah i've been veggie since I was 10, vegan for the past 6 years and never been a fan of any meat but i'm always looking for alternativs to things to suggest to my frindss and family, I'll check the konjac out thank you :)
You are welcome, there is so much variety in vegan cuisine, I often slip, but when i cook for myself it is much easier.
you can probably make it taste kinda fishy with seaweed..
