Nutritional Vegan Stew

This stew contains 9 different veg, nutritional yeast for an extra vitamin b12 boost and xanthum gum to thicken. I have also used soya single cream (contains a third of that fat apparently than in cows milk) to give it that creamy taste. For herbs, I use rosemary, thyme and parsley. I make this up every week in the slow cooker for four hours, feeding family members who are vegans, vegetarians or lacking certain vitamins . (Not the hubby though, he likes meat with his veg 😏)
