Hot soup for a rainy spring day - A my way kind of Borscht
Today was a day where winter didn't really stroke back but spring had to step behind a little. Long story short: it was a cold and totally rained out day, grey and moist and misty. 😖
The good thing about rainy days is that they are perfect for rich, hot soups and stews and this colorful and pleasant smelling beauty, inspired by the Eastern European dish Borscht, landed in my bowl finally:

First I prepared the vegetables. I cut potatoes, carrots, parsnips, leek, red cabbage and beetroots in cubes or pieces.
Then I roasted some caraway seeds in a pot with a tablespoon of vegetabl oil, I added a tablespoon of red sweet paprika powder and a tablespoon of raw cane sugar and let it caramalize. I added the vegetables, some vegetable broth and as much hot water to cover all the vegetables. To give it the typical borscht aromas I put three or four bay leaves and a few allspice (pimento) berries into the broth.
I brought everything to cook and let it simmer until the vegetables were done. I like my vegetables not too soft. I took the soup off of the heat immediately when the potatoes were well done.
I seasoned with salt and fresh ground pepper and some fresh lemon juice and served the soup with a vegan sour cream (made of vegan cream cheese, lemon juice and some salt)
I hope this soup makes up for all the freezing in my thin jacket on my way home after work. I don't need a cold right now!

Wow! This looks amazing. Growing up, my family would have borscht every once in a while, but it came in a jar and was pretty gross. They added boiled potatoes and sour cream but it didn't make it edible. I never tried real borscht, but will give your recipe a shot. It sure looks good and healthy!!!
I think real borscht doesn't include red cabbage. I just adjusted it a bit. For me every stew with potatoes, beetroots and sour cream feel a bit like borscht. 😜

That looks amazing. I love caraway seeds in a good rye sourdough (I might make some today now it's Saturday and I have some time). They remind me of my German Nana who used them in her cooking. I used to make a version of beetroot soup with tons of fresh parsley added at the end as parsley always reminds me of her too - she grew it in her garden and used heaps of it. It was a more spanish style soup as I'd used chorizo and smoked paprika, but I don't eat meat so much any more so I'd have to do it without.
PS I still love your animated banner.... I really need to figure out how to do one for myself - I dont want to buy one!
Yes, I think caraway seeds and parsley are very german "spices". Glad, my recipe brought back good memories! The banner is easy to make with the adobe photoshop GIF tool. Actually the hubby made it for me. I just did my stint by drawing the pusteblume (dandelion) and her fluffy seeds on my iPad.
I like to think I'm fairly good at tech but Photoshop stumps me!! I'm gonna try though...
