Excellent article! It's super important for everyone (of any diet) to remember that this isn't a very-sum-game of vegan or not, every single food decision, purchase and nibble impacts your health and the environment. Simply making a different decision of what to eat at a restaurant makes an impact so don't be afraid to try small changes and try things like Meatless Mondays and experimenting with different foods. Also remember especially since we're all so sedentary these days it's virtually impossible to NOT get an adequate amount of protein (2000kcal of potatoes or just about any food would do it), so please stop considering it whatsoever. On the other hand the Western Diet is chronically, criminally, deficient in Fiber and you should try to always add more to your diet. Fiber makes you feel full longer, aids digestion and feeds that all those important microbes in your gut :)
