MERRY CHRISTMAS 🎄❤🎄
Hello My Dearest Foodies,
I wish you a very Merry Christmas and wonderful Holidays. I just made these delicious cookies for my family and I am sorry, I am sharing the recipe the last minute, but I was just too busy to do it earlier.
These delicious Quinoa Ginger Cookies are based on my Rustic Hearts recipe dipped in a chocolate; https://lenanovak.wixsite.com/vegan-living/rustic the only difference is that these once are with ginger and the hearts are with vanilla. Also the shape and icing is different. However, you can use chocolate if you prefer. They are both delicious and healthy, unless you use sugar icing. I did in this case, but little bit, so it’s not too bad. Next year I hope I will have more time to make cashew based icing.
There is one more thing I like to point out. I discovered that when I freeze them before baking they turn out better, so you may try that too. I have no idea why, lol.
CHRISTMAS QUINOA GINGER COOKIES
Vegan - Gluten Free - Refined Sugar Free
Makes 14 cookies
INGREDIENTS
• Cooked quinoa 2 cups
• Dates 1 cup pitted and soaked in the water for 20min
• Almond flour 1 cup
• Coconut oil ½ cup
• Raw coconut sugar 2tbs
• Baking powder 1 tsp
• Ginger powder 1tbs
• Himalayan pink salt just a pinch
• Cookie cutter
• Parchment paper
• Flour
• Rolling pin
PROCESS
Before you start, have ready your baking sheet lined with parchment paper and large cutting board or flat surface for rolling the dough. Also, it is a good idea to have ready a bowl with warm water to dip your utensils to prevent the dough from sticking.
• Blend everything in the high power blender or food processor.
• Start with the dates and keep adding the rest of ingredients gradually.
• When ready, place the dough into a bowl and store in a refrigerator for 2 hours or overnight.
• When ready, apply flour on the ready flat surface and divide the dough in two equal pieces.
• Start with a round bun like shape and then gradually work with your rolling pin down to about ¼ inch thinness.
• Begging cuing out the cookie shapes starting from the edge of the dough baking sheet lined with baking paper until it’s all done.
• Repeat with the other half of the dough.
• Preheat the oven to 400F.
• Bake for 20 to 30 min.
• Let them cool down at least for couple of hours before you decorate.
