Vegan Egg Rolls!

I love egg rolls. Love. I've never fried anything before, but decided to give it a try and oh my gosh they are amazing!!!

So, you start with these. When I saw these Vegan wraps I knew it was fate. And that healthy eating would be taking a back seat tonight. Lol!

I can wrap a mean burrito, so I figured the wrapping would be easy, but, the egg roll wraps took several practice tries before I could get them nice and tight.

The insides are chopped kale, cabbage, onion, carrot and romaine lettuce with almonds and tossed it all in a little bit of a sesame vinagrette.

As I said, I've never done this before and had no idea how quickly the oil would get too hot and burn everything!

I turned it down and tried again.

They looked so good! Inari was the first to taste test, and he loved it, he ate three of them!!!

We have definitely found a winner. We used a sweet soy for a dip, though Sparrow tried the sweet chili, lol! "Too Picy! Too Picy!!"

Try new things. You won't be disappointed!!
