Farm to Table: Freshly Collected/Foraged Food =Vegan Garden Curry!
Magically transporting plants into delicious, highly nutritious meals! ✔️🙌
Wildly harvested ingredients = garden fresh veggie curry! 💚
In my last post, I explained how I started off 2020 with a 9 day water fast (I know, it was a long time without food!) On the 6th day, I went to a cabin in the jungle on an organic permaculture farm.
Looking back on that decision, it wasn't my best laid out plan because looking around at all the delicious, fresh, organic food growing everywhere definitely made it harder for me to ignore and therefore not be completely consumed in the idea of reintroducing food to my system.
That said, by day 8 I had asked the owner of the land if he could have some of the edible, very local plants collected for me to take home to make my very first meal from! Note: I start introducing hard/solid foods at minimum 2 days after completing a fast and drinking juices/liquids for that transitional time.
The "grandfather" like figure came over first thing in the morning of day 9 with arms full of freshly picked fruits and veggies from the land and explained each unfamiliar item to me.
See, each plant has its own way it grows...
🌴 Some grow on trees/shrubs like the
coconut, banana flowers, green berries here...
🌱 Some grow from the ground/vines...
The beans, the chayote, the eggplant....
Those flowers are edible!🌸
🌴 We have some heart of palm which is the stalk in the middle of the palm shoot.
🌱 Galangal, turmeric, torch ginger, taro roots and shoots and lemongrass grow from under the ground and up.
Food is growing all around us! ✨🌸
Nature is so infinitely magical with how it produces such an abundance of food for us-- some of which, we have forgotten that we can eat!
Freshly homemade coconut milk ties this all together into an extremely flavorful and fresh bowl of super powers! ✨💚🙌
I genuinely believe food is medicine! This curry is full of medicinal properties that come together to make not only a mouth-watering dish, but a nutritious, fully balanced, healing meal!

I've thought about my friend several times lately. Seriously. In the last two weeks I've only eaten meat in soup. I'm not ready to completely move to your side of the room, but I'm feeling pretty good about 'reduced meat consumption'.
I am really glad to see you back here. Who knows? Maybe I'll even return at some point. Maybe. Don't hold your breathe.

This year I gave myself more time for creation again so that's how I am back :) I was at a festival a couple of weeks ago and they had the Beyond Meat burgers and I was thinking about when I asked you to go try it for me ;) It's super similar to what I can remember... I actually was very put-off by it :P
I'm happy and excited to hear about your diet (I'm sure you're not surprised by that!) Hey, limited and reduced consumption is a huge deal so I am super proud and happy for you! Well, I am still looking at alternatives. My parents can't eat raw all the time so it is a mixed and match thing.
