Vegan Eggplant Balls
Eating with our extended family is always amazing. While at my inlaws house we added gluten free to the list of dietary recommendations. I eat vegan, Stacie D @freedomtowrite eats 98% vegan, my mother inlaw eats gluten free.
While making a meal it might be that we make one of something vegan, but the other will be gluten free but include dairy or egg.
This eggplant ball meal was a combination of amazing. We had vegan eggplant balls, with a vegan tomato sauce, ontop of gluten fres noodles.
This was incredible. Throw in some fresh garlic and you're ready to go.
