Sweet potato and pesto hash (So good!!!)

So....my sweet potatoes got a little overcooked in this video (thanks, mom, for calling while I was cookin'☺), but it is still DELICIOUS and the pesto makes the hash super moist and flavorful.

Sweet potato and pesto hash
Serves 2-3
HASH
2 tbsp Vegetable oil
1 large Sweet potato, peeled and cubed
7 oz extra firm Tofu, cubed
10 button Mushrooms, quartered
12 Brussels sprouts, halved
1 small Onion, chopped
3 cloves Garlic, minced
1 Yellow squash, quartered and sliced
3/4 tsp Rosemary, dried
3/4 tsp Thyme, dried
3/4 tsp Basil, dried
2 tbsp Balsamic vinegar
Salt and pepper to taste
PESTO
3 cups (packed) Fresh basil
1 clove Garlic, whole
1 cup Olive oil
Salt and pepper to taste
INSTRUCTIONS
Saute the olive oil and sweet potato over medium heat for 7-10 minutes. Add the remaining ingredients and saute for an additional 10-12 minutes or until the vegetables are just tender and the balsamic vinegar has reduced and become sweet.
For the pesto, combine all the ingredients in a blender and blend until smooth. Spoon 3-4 tablespoons over each serving. There might be a little pesto left over.

love the simplicity of your presentation style! great job! if i may suggest, i think its better to choose one video platform to use in your posts (dtube or youtube) and not make two posts of the same content as it can be too spammy for some people. but overall a great post! thanks for sharing! :)
Thanks so much! I know what you're saying about the double posts and I completely agreed. Do you happen to know how to post on Dtube without having it automatically post on my Steemit blog? That way I could still support Dtube while creating more complete and cohesive blog posts on Steemit, all without bombarding my followers with double posts.
It feels like Steemit and Dtube, although connected, have different audiences and I'd like to reach both if possible.
I really hate that Dtube videos can't be embedded on my Steemit blog and I hate having to send people all over the internet with links to view my content. I think that's asking too much for a 40-second food video. I want to make it as easy as possible for everyone to view my content and, for now at least, Dtube isn't the easiest/nicest/most convenient option.
However, I do want to support Dtube because I think it has the potential to be a great platform in the future.
It's confusing, but hopefully I'll get the hang of it. THANK YOU so much for the help and sorry about the long post !!! :)
just had a chat with @carlgnash, a very helpful friend here about your problem.. it seems that currently the only way to do it is to use the edit function of your post after you have posted on Dtube. that way you can now add the images and other things however you like. hope this helps! :)

looks gd! i love sweet potato but the season for it is in Autumn here september to december. Who decided sweet potato day should be in February, is it in season somewhere else? hope u can enlighten me!
Thank you! I'm in southern California, so the season is a bit longer here (Sept-April, I think), but I completely agree that the day should be in the fall. A lot of food "holidays" seem to be silly and arbitrarily set.
