Multigrain gluten-free, nut-free, vegan cookies.
I already have posted different recipes of cookies. Every time I try to make it better. This time it was more challenging as I have to supply cookies to a coffee shop who cater vegan customers from all over the world. In previous, I always prepared to consume ourselves, but when your cookies are going to be tested by different persons, it requires to be more careful in making as it should look and taste nice.
I was ordered to make multigrain, gluten-free, nut-free and dairy-free cookies.
Ingredients
As it should be multigrain so I decided to use three gluten-free flour viz. Gram flour, Sorghum flour and Oats flour.
Other ingredients I used are- Vegetable oil(rice bran), Powdered cane sugar, Baking powder, Baking soda, Vanilla essence, Cardamom powder, Papaya cherry, Salt and Water.
Procedure
In a bowl, oil, sugar, water and vanilla essence is mixed well with the help of beater to make a smooth thick liquid.
In another bowl, all other dry ingredients are mixed and passed through a sieve to make a uniform mixture.
The dough was prepared with wet and dry ingredients. Cookies were made in the desired shape with the help of mold and baked in a pre-heated oven at 170 degrees for 12 minutes. Baking time and temperature vary according to thickness and ingredients used. My cookies were burnet first time then I adjusted the temperature and time.
I realised that baking is a continuous learning process and every time we could learn something new.
