Vegan Breakfast

For many years I was part of the "it has to be cereal for breakfast movement."

It was the 'go to' particularly when there was a lot of kids to feed. But I have learnt that it really doesn't take much more time to prepare something different and include some servings of fruit and vegetables to start the day.

Toast with avocado, tomatoes, and vegan cheese under the broiler

Smashed avocado with salt and pepper and a splash of Worcestershire sauce

Ingredients

  1. Toast the bread.
  2. Mash the avocado with some salt, pepper, and a splash of Worcestershire sauce.
  3. Top the toast with the avocado, tomatoe and vegan cheese. Pop under the broiler on low for a a few minutes until heated through.
