Spiced Carrot-Avocado Yogurt Cake. Just plants and love

Making food that looks and taste like heaven yet acts like medicine has been some journey for me. It started as a necessary skill to improve my state of well being and ended as passion that I have been happily sharing for the last decade all over the world with other healthy foodies like myself.
This recipe requires baking, which can be a bit intimidating for some of us at first.
Do not be put off by the word 'baking". It is really easy and fun once you get into it.
I never baked in my life as I thought all those traditional baked goodies were full of stuff that I did not find good for my health, and then, through my love for plant-based eating I discovered baking with avocado experience.
Now, that is something to write home about. Now we can talk about baking - no eggs or butter, as avocado takes care of their job just as good, we can always replace the white bleached flour that is severely processed and available everywhere with something more sophisticated and healthy - organic spelt /buckwheat/millet/rice flour, there are some gluten-free mixes available these days, no limits really.
It is amazing to witness how Nature gifted us all that we need to live a good, healthy, enjoyable life.
I learned that
Natural forces are always at work, whether we are aware or not, respect them or not, we are all influenced by them.
Something magical happens when we align with these forces. It feels like we become a part of the bigger picture, not to mention the JOY that we experience from our newly-discovered harmonious relationship with food.
Ok, enough philosophy, let us get creative now.
It took me a bit of experimenting and playing to create this edible divinity. It is just perfect now. Enjoy the making it, having it, sharing it..... an the smell of Christmas in your kitchen.
Time investment - one hour.
We need
wet ingredients:
One avocado
1 T ground flax seeds, soaked in 2 T water
1 cup coconut yogurt /kefir (I make my own, so can you if you put your mind to it), if you make your own kefir, use the one you have
1 T raw coconut oil
3 T maple syrup OR coconut nectar/sugar OR a few medjool dates, whatever makes your heart happy. Use more if you have sweet tooth.
dry ingredients:
1 cup flour of your choice, I used organic spelt here
1/2 cup oats
1 T tapioca starch/flour
1,5 T baking powder
2 T cinnamon powder (make sure it is Ceylon one)
1 t turmeric powder
1/2 each of nutmeg and cardamom seeds, freshly grated/ground
1/2 Celtic/Himalayan salt
plus
Two med size carrots, finely grated
2 T ginger, freshly grated
Handful of raisins
Handful of walnuts, chopped
How to:
Preheat oven to 180 C / 350 F.
Blend wet ingredients into a smooth mix.
In a large bowl combine all the dry ingredients and add the wet mix to it. Stir well.
Finally gently fold the remaining ingredients into a mix.
Pour the plant alchemy into the baking tray or individual cups that you decided to use.
Bake for 35-40 mins.
Serve with love and some raw chocolate sauce!
ps. I also played with other kind of frosting and came up with a gorgeous pink one (who does not like pink plant frosting?) made with coconut cream and beetroot. Will share the recipe soon.
