SMOOTHIE OF THE DAY | BLUEBERRY AND KALE ANTIOXIDANT MORNING LOVE ღ ღ ღ
Heya beautiful souls. Morning on my side of the world and you know what that means: SMOOTHIE TIME!!!
In just a few days I am flying to Belgium to visit family and friends. Though I can't wait to see them, I am also getting excited to eat as many berries as I can. Since the berry season has started it will not be that difficult to find these yummy, juicy, sweet treats.
Through all my berry excitement I got tempted to buy a package of blueberries in the supermarket the other day.... big disappointment. They were super expensive and the taste was so so. Normally I would have eaten the whole package even before it would arrive home... not this time though.
Nonetheless, they made a yummy and beautiful pink morning drink.
BLUEBERRY AND KALE ANTIOXIDANT MORNING BLAST
INGREDIENTS (serves 2 for breakfast)
- 2 cups fresh kale
- 1 to 2 cups unsweetened coconut water (or filtered water)
- 1 orange, peeled
- 1 cup pineapple
- 1 cup blueberries
- 1/2 avocado
- 1-2 tbsp coconut oil
FYI: I had a little pink dragon fruit left so added that too ;)
DIRECTIONS
- Blend kale and coconut water until smooth. Add remaining ingredients and blend again. If the smoothie is too thick, add more water and blend again until smooth. If you have a high-speed blender you can throw in everything at once.
- Optional: Top with hemp hearts or other superfoods/toppings you like.

Gotta love smoothie time. So I take it blueberries aren’t that expensive in Cambodia? Over here, they are about 6 bucks for a tiny pack of them…
