💜 RASPBERRY BAVAROIS WITH PECAN CRUST AND FRESH BERRIES (V, GF)💜
Who's up for a pre-valentine dessert? To be honest, in the 20 years my hubby and I have been together we have never celebrated Valentine's. We think it is a stupid commercial stunt to make you buy unnecessary things for each other.
For us, love isn't about buying each other expensive gifts. Also, do you really need a special day to show how much you love each other? Shouldn't you show love every single day?
I am 38 years old now so it is kinda crazy to think I have been together with my hubby for more than half of my life. Though love changes over the years, I couldn’t think of any other person to spend the rest of my days with.
We are still very much in love. We see it in all the small little things we do for each other every single day. When my hubby is out of town for a few days for work, it’s like part of me is missing.
One of my favorite ways of showing my love for him is through food. In Belgium we have a saying that a man’s love goes through his stomach, meaning you can make a man love you by cooking him good food.
So that’s what I did yesterday on my day off.
RASPBERRY BAVAROIS WITH PECAN CRUST AND FRESH BERRIES
INGREDIENTS
For the crust
- ¾ cup dates, soaked and pitted
- ⅓ cup dried mulberries
- ½ cup pecan nuts, roasted
- 2 tbsp cashew butter
- 3 tbsp cacao powder
- 1 tbsp maple syrup
- Pinch of Himalayan pink salt
For the raspberry bavarois filling
- 1½ cup cashew cream
- 1.5 tbsp maple syrup
- 150-gram blended raspberries
- 1.5 tbsp water
- 1.5 tsp agar-agar
FYI: I make my own cashew cream by soaking 1 cup of raw cashews in boiled water for at least 30 minutes. Drain and blend with 2.5 to 3 cups of water.
Toppings
- Fresh blueberries
- Fresh strawberries
- Toasted almond flakes
- Desiccated coconut
DIRECTIONS
To make the crust
Soak dates in boiled water for 10 minutes, remove the pits.
Add with all other crust ingredients to a blender. Blend until it all comes together and no big pieces remain.
Press firmly into a springform pan or heart-shaped metal mold and plate like I used.
Pop the crust in the freezer while making the filling.
To make the filling
Blend raspberries and maple syrup until smooth. Set aside.
Combine agar-agar and water in a small bowl. Whisk well.
Bring cashew cream and agar-agar to a boil. Remove from the heat and add raspberry juice.
Allow to cool until lukewarm and pour over the crust. Let set in the fridge for at least 1 hour. Remove the heart-shaped mold or springform.
Top with fresh berries, almond flakes, and desiccated coconut. I added some of the toasted almonds on the sides too.
