A vegan bolognese-inspired recipe while we prepare for our next event. ~

We are preparing for our next event;
herbs are being harvested and dried, the recipes are taking its final forms and we are making broth from veggie scraps we've been saving up in the freezer.

The next event we are attending is "Álfheimr - Mabon 2018 - 2 day tribal gathering and release party" in the Norwegian forest. We are having so much fun, and learn a lot in the process and preparations!

Yesterday was spent driving to the border between Norway and Sweden to do food shopping for the event. Since they have a really good section of vegan food, and is also very cheap compared to the inland, we found loads of goodies for the cafè.


After such a long day of driving and shopping groceries, some amazing vegan comfort food was what we needed.

We were craving something that involves little effort and time. Still, it had to be a worthy and satisfying, protein-rich meal.

After some thinking I came up with the amazing, but not too creative idea, to tweak and take inspiration from the famous Italian dish bolognese.

Some herbs from the balcony in Norway is perfect for this dish.


Here you go, the recipe!
Serves 3 hungry people.

Base:

  • Spaghetti.

Tomato "mince" sauce:

  • 1 Onion, chopped.
  • 7 pods of garlic, minced.
  • 1/2-1 Chili, minced
  • 3 Tbs. Fresh basil, chopped.
  • 4 Tbs. Tomato paste.
  • 1 can of quality finely crushed tomatoes.
  • Any type of vegan mince, today we used 400 g from the brand "Naturli", but I have made this recipe with several different types.

Spices & Toppings:

  • Salt.
  • Pepper.
  • 1 1/2 Tbs. Liquid smoke or smoked paprika.
  • Other spices of your choice.
  • Optional: Vegan shredded cheese.

You also need:

  • Frying pan.
  • Casserole.
  • Knife & cutting board.
  • Some spoons for measuring.

Set your frying pan to medium-high heat. Chop the onion, garlic, chilli and basil.

Add a splash of oil of your choice to the pan, and throw in the onion. Fry for a minute and a half, before adding the garlic, chilli and basil.

Cook for another minute before you add your vegan mince, salt and pepper. Stir around for 20 seconds before adding the liquid smoke.

Fill a big casserole with water and some salt, and set it to boil on one of the other cooking tops. Return to your frying pan.

Let the mince cook for five to ten minutes, then taste if you find it salty and spicy enough.
Add some spices of your choice, or just continue by stirring in the tomato purè.

finish with adding the can of tomatoes while giving it all a good stir.

While you let the sauce cook for 10 minutes, prepare your pasta according to the package instructions

Serve it as you wish and enjoy, preferably with candles and some good music.
