Ulog # 7 : Real Cooking is following more your Heart than following recipes!

When the work is your hobby you'll never be bothered. You never feel bored! As I am, never bothered by cooking. But one thing, when the mind is very upset or there is too much pressure, that time I can't concentrates in anything. Everything turned wrong! What to do with your mind when it's never controlled by you.

On the last birthday of my neice, I made some sweets for her. I love to cook sweet items. Unfortunately my parents have diabetes but I made dessert with sweetner for them. Why do they miss the delicious food!

Here are some of my items:

Carrot is a food counted by many nutrition. The carrots laddu is a delicious confectionery, as well as contains great nutrition. There are many people who do not want to eat raw carrots, carrots laddu is perfect for them.
Now What you need to make carrots laddu is ...

  • 1 kg of grated carrots,
  • ghee,
  • sugar one and a half cups,
  • thick milk of 2 cups,
  • nuts,
  • kishmis,
  • chana,
  • cinnamon,
  • small cardamom,

How to make:
Make a the pan heated, then put the ghee with cinnamon, then put the grated carrots and stir. Fry well for quite some time. Then mix the dense milk, again stir for sometime and cover it for 5-7 minutes. Now in another pan make suger syrup. Cover out the pan and put the syrup over there mix well. When it's becoming sticky put all nuts, kishmis, chana and again mix very well. Put it down from the pan, spread it in a plate and let it little cold. Then make them in the ball shape. After cooling, save in the air tight container to freeze.

It's a colorful and yummy dessert. With the following instructions you can easily make it.
Take 3 different flavors gelatin with different colors. Make gelatin as follows:

  • mix gelatin with 1 cup boiling water until completely dissolved
  • add 1/2 cup cold water and mix
  • pour into 8inch square cake pans
  • chill in fridge several hours until firm.

Once it's get solid, cut the flavors of jello into small blocks and mix together carefully. In a separate bowl, dissolve 2 envelopes unflavored gelatin in 2 cups hot water. Let cool a bit and stir in the condensed milk. Cool to touch and pour cooled milk mixture over jello and chill overnight.
Cut into squares and serve.

This is a traditional Indian dessert. Spongy milky balls soaked in rose scented syrup. You can easily make it in home. There's some sensitive issues, so you need to be careful to follow the instructions. Here it is :

1 cup dry milk powder
3 tablespoons all-purpose flour
2 tablespoons ghee
1/2 teaspoon baking powder
1/2 cup warm milk
1 tablespoon chopped almonds (optional)
1 tablespoon chopped pistachio nuts (optional)
1 pinch ground cardamom
1 quart vegetable oil for deep frying
1 1/4 cups white sugar
1 teaspoon rose water

Sugar Syrup:
Add water, sugar, cinnamon stick, cardamom seeds and saffron into a small saucepan. Heat on low heat until all the sugar has melted. Boil for 5 minutes. Add rose water. Keep on low heat, slightly simmering.

Dough:
Heat oil.
In a small bowl, add milk powder, flour, baking powder, cardamom powder and mix well. Add warm milk and stir until well incorporated. It will be a wet sticky batter. Add in ghee and stir in. The batter should be sticky but should be easy to shape a ball.

Grease your hands with ghee and take a teaspoon-amount of dough and roll it into a ball, making sure there are no cracks.
Drop ball into hot oil, it will look like the oil isn't hot enough, but it is! Just give it some time. The dough will slowly rise up. Fry until golden brown in 6-8 minutes. Place the ball into a container. Use a fork to remove the cinnamon and cardamom pods from the sugar syrup. Pour all the hot syrup over the fried gulab jamun. Set aside to soak for 1-2 hours, preferably overnight. Top with chopped pistachios and almonds. Enjoy!!
