ULOG:26, LEARNING HOW TO COOK FOOD FROM PAPUA NEW GUINEA

I can't scream Loud enough about my Love for food, and that includes the desire to learn and prepare different kinds of food. If i had extra bucks to throw around, i would probably enroll my self in a culinary school, just for fun.

This time i was learning about PNG (Papua New Guinea) food. Their way of cooking is very similar to Tanzanian way of cooking, yet different.
Similar in the simple sense that they love to use garlic, ginger, lots of different vegetables and a whole lot of coconut cream. And the difference is mostly in the way of preparation.

PNG food is packed with authentic natural flavour of the ingredients , and generally super easy to prepare.

For this meal for instance, it probably took longer in pre-preparation of the ingredients, than the actual Cooking.

Please note that this is not exactly how they prepare food in PNG but the idea of it. I am told in reality the food is cooked in Hot stones. I am excited to travel to PNG in the future and learn about all these unique ways of cooking, and their deep cultural practices ofcourse.

Lets get right on to the Dish.
Ingredients, no measurements.. Trust your gut.

Chicken
Irish or sweet potatoes
Ginger and garlic
Coconut milk, lots of it
Onions
Tomatoes
Brocolli
Carrots
Spinach, chinese cabbage, or whatever. Lol
Salt
Spices as you like, we used,
Knorr chicken cubes, and ground pepper,

  • i have noticed PNGs are not heavy on spices, so stick to the basics.

The Cooking:
All you have to do is put the chicken to boil, with thw garlic and ginger, onions, bit of salt.

5minutes or so into the boiling, add potatoes, carrots and whatever hard veggies you have.
Let if boil for a bit, then, pour your coconut milk, cream .
And keep additing the veggies as it boils

Keep adding, goddamit, yes untill they are all done.

I said, just keep adding.. Don't turn the chicken and potatoes from the bottom, let it just layer up.

Ofcourse the cabbage had to go last, you dont want those over cooked now, unless you actually do.

And Voilaaa, this meal was rich in flavour, no amount of oil was added, as there's more than enough already from the chicken and the coconut.
I had more than one round. And to be honest, i think i will be making this more often.
