ULOG # 002 - Between friends and some pizzas. (DEVELOPMENT STEP BY STEP)

It's a pleasure to greet you again and this time as a pizza maker, have you ever dared to make one on your own ?. If you have not done it, I invite you to encourage yourself, as it is very easy and ideal to share with family and friends, I will explain step by step how we made the pizzas without any difficulty you just need the desire to learn and some ingredients that I will mention next :

Ingredients for the dough:
1 1 / 2Kg of all-purpose flour.
200gr of Vegetable butter or butter.
A spoonful of sugar
A spoonful of instant yeast
A pinch of salt.
Ingredients for napoli sauce.
1kg of ripe and large tomatoes.
A head of garlic.
An onion
6 leaves of basil
A spoonful of sugar
A pinch of salt and dried oregano.

Kneading process:
Add one kg of flour in bolt, add a spoonful of sugar, the yeast and the pinch of salt, then add half a liter of warm water, start making enveloping movements until all the ingredients come together, at that point add 200 gr of butter and move again. Then add little by little the half kg of remaining flour to the dough until a homogenous mixture is made without sticking from your hands.
Once the texture of the correct kneading is achieved. Make large balls tailored to the tray you are going to use for baking and leave to rest for an hour and a half. Until it doubles its size.
Then roll the dough balls in a bowl with enough flour. And place the dough stretched 1cm thick (according to the taste of each)
And let it rest again in the trays for 20 more minutes. Then add the napoli sauce and add mozarella cheese, sausages, bacon, paprika, and everything you want to accompany your pizza with.
Then bake at 220 ° c for 30 min.

Ingredients for the Neapolitan sauce:
1 kg of ripe tomatoes, poached and peeled in concaseé (or a can of peeled tomatoes 900g)
1 medium onion (or 60g) thin cutlet
2 garlic cloves finely cut
Olive oil
1 sprig of fresh basil
1 tsp sugar.
Preparation of the Neapolitan sauce:
Lightly process the tomatoes in the blender
In a pot with hot oil sauté garlic and onion until crystallized
Add the processed tomatoes and the basil
Add the teaspoon of sugar, to lower the acidity of the tomato
Lower the flame to a minimum, cover and stir occasionally with a wooden spoon, keep cooking for 40 min taking care not to dry, always with very low heat
When ready, it can be stored in sterilized glass containers with a lid
