I don't really know what it feels like to take a trip with wife because I'm not yet marry but i believe the entire journey will be fill with love and affection, she's your wife and feel your trip won't be fun without her, i just feel the love in your post. Your travelling destination is turkey because it's a country full of natural beauty and history I bet your wife will enjoy such a trip with you and I'm handsomely sure 7 day's is okay for the travel.
