Katuray Tree

Known as the Katuray tree in the Philippines, the flowers are eaten as vegetables by themselves or mixed into curries or salads. The red flowers are considered bitter, but the white flowers, grown in places like Hawaii are sweeter. The official name of this plant is "Scarlet Wisteria" and is found in many areas of the southeast. This one was in the Ilocus region of the Philippines.
