Last night we attended the 48th International Dinner at the University of Wisconsin - Stevens Point. Our daughter Lesly was part of the show, representing Honduras for the Flag Ceremony and the Fashion Show.

The event was a dress up affair so Paradise had to get into a suit and tie for the evening. I had with me my beautiful wife, @wrladyhawk, and our amazing daughter Lesly. We are very proud of Lesly, she is a freshman and already doing very well on campus. She is a member of the International Club as well as the Spanish Club.

The event was held at the Dreyfus University Center and there were over 30 Countries represented. UWSP has a large international student body. They pride themselves on diversity and actively recruit top international students. We are very proud of Lesly for her scholastic achievements.

The food was international and very tasty.
We enjoyed an appetizer called Saltfish Fritters. They were cod fish coated in a mixture of peppers, onions, garlic, and spices popular in countries in the Caribbean.
The vibrantly attractive salad was called Russian Vinaigrette. It was made with beets, sauerkraut, potatoes, carrots, onions, vinegar, and olive oil.

The entrees was Honduran chicken with tomato sauce and a mix of green peppers, celery, cilantro, garlic and honduran style sour cream.
The entrees was accompanied by Jollof Rice. This Nigerian version of joolof rice consists of rice flavored with thyme. bay leaves, curry, and a mix of vegetables.
Also included was another salad from Honduras. Cabbage salad with tomatoes, cucumbers, cilantro and lime juice, sprinkled with salt and cumin.

There was also Honduran Horchata and Turkish coffee for everyone to enjoy as well.
For dessert we enjoyed a divine Hawaiian wedding cake, as well as Panna Cotta, and Italian offering made of sweetened vanilla cream thickened with gelatin. Yummy and decadent!!

After dinner we relaxed and enjoy some amazing international entertainment.

Russian Dance

Through Russian history, dance has been a vital method of artistic expression. From traditional folk dances, to the famous ballets written by Tchaikovsky. Dance is a universal window into important aspects of one's culture. Pleasing to watch, but also a enriching cultural experience.

A Trip to Palestine

A medley of traditional and popular Middle Eastern music, incorporating different pieces of significance to Palestine and the Middle East.

Mamonia

Mamonia is a popular Bangladeshi song describing children singing and playing with the pets.

Hmoob Lub Kua Muag (the tears of the Hmong shed)

The memories and love from those who sacrificed for the Hmong people and children.

Aquareia

A classic Brazilian song composed by the great artist Toquinno. Although written about painting, this piece can be interpreted with a deep meaning about life and how to live it.

The Cross

A Christian song composed by a South Korean in traditional Korean style. The preformance will be played in a piano trio setting, consisting also of a violin and cello.

Suliko

A popular Georgian love song. The lyrics based on a poem written by prominent 19th century poet, Akaki Tsereteli.

Bangla Music Fusion Dance

The dance demonstrates the culture of Bangladesh with the feels of both classical and folk, performed by three sisters.

Following the entertainment there was a fashion show. This consisted of all the International students who dressed for their individual countries and cultures.
