One of the best views I've found in Hong Kong is from the infinity pool at the Kerry Hotel. While it's quite pricey to stay for the night, you can get an all day pass to use the pool, gym, sauna. It'll set you back $400HKD but it's totally worth it. As a budget traveler myself, it was really nice to visit this spot. The day pass also provides a locker, sandals, towels. I also really liked the bar which had reasonable prices for beers.
My best tip is to stay around sunset so you can see the spectacular symphony of lights from the pool.
