Blue Mackerel: Tastes Of Taiwan
Blue Mackerel Sauteed In Spicy Vinegar
Blue Mackerel on your dinner plate with a variety of Taiwan’s fresh vegetables is a dinner made in paradise. Blue Mackerel, like all of the fish at the morning-market, is the catch of the morning. It is as fresh as you can get it. It just came from the Morning Market. If you prefer, grab the boat and go fishing. There is nothing like the taste of fresh fish! The flavors are so rich! Blue Mackerel is loaded with Omega 3 oils, a definite plus for our health. One of the many ways to fix it is to saute it in Spicy Vinegar. The taste is scrumptious!
I have heard tell that the taste of Blue Mackerel is a little too fishy. How can that be? The last I checked, it was a fish from the sea. So let’s get a tad bit real! Blue Mackerel is an awesome fish with a delightful flavor. A basic recipe for sauteing your Mackerel is below. From there you can add other flavors into the pan. A favorite is to add Spicy Vinegar and omit the butter. In this case you can use a little Olive Oil.
Simple Sauteed Mackerel
Taken from Mark’s Daily Apple RecipesThis is about as quick and easy as any recipe. It takes less than 20 minutes to prepare and cook this delightful dish. Blue Mackerel is often the cheapest fresh wild fish you can find in Taiwan. If you are elsewhere, use the local fresh Mackerel where you live. There are really no excuses not to try Mackerel.
Ingredients:
2 mackerel fillets, about 1/2 pound each
Salt
Pepper
Butter (optional)
Lemon
Method:
Apply liberal amounts of salt and pepper to the fleshy side of your fillets. At the same time, heat a pan (cast iron, skillet, whatever) over medium high heat. Rub that salt and pepper into the flesh, then slather it in butter, use enough to completely coat the fillet, around 1 to 1 1/2 tablespoons. Place the fillets, buttered side down, skin side up, into the pan. (Omit the butter if using Spicy Vinegar. )
Just a side note here: If you are using the spicy vinegar, we omit the butter. If you want to add a little oil, you add Olive Oil just before adding fish to the pan. Most also like to add freshly Ground black Pepper, Ground Pink Salt or Sea Salt. Then add 4 cloves Garlic, Parsley, Smoked Paprika, and Red Wine Spicy Vinegar. For those that cook around whats in the garden, you can add different fresh herbs, and vegetables. No matter how you make it spicy and what vegetables you use, it is delicious.
This is just a sampling of what you can do with fresh Mackerel. It is delicious!

Fish is easy to cook @nexit. You can broil or bake most kinds. River fish are often fried.
