Orange French cheese - Mimolette
Mimolette is specific for the Northern France and the city of Lille where I live.
It was made by the wish of Louis XIV, so we could have the substitution for the Edam, and it was often easten by Charles de Gaule, the leader of the French RrrresistAnce!
When you see the Mimolette, it looks like a melon.
The specific texture of its crust originated from the hard work of cheese mites.
Don't be scared, they are our friends who work hard to make something nice for us.
Its taste is somewhere between the Edam and the Parmesan, with a little bit of "nutty" flavor and the texture is a bit dry.
Orange color originates from the annato berries.
I use it when I prepare the eggs because it melts nicely and it looks just like the yolk.
