I find that hotel restaurants usually cater to the lowest common denominator.
Spice is a great example. Since hotels get many clients who can not handle spice, at the hotel restaurant, when you order something that is typically spicy at street booths/restaurants, it's always mild.
Oh! Didn't really think about it that way but I guess that makes sense! 🌶️🌶️🥵
